EPS with ascii formatting

EPS with ascii formatting

I am trying to convert a jpg file into an EPS applying a color profile and with ASCII formatting. I use convert jpfilename -compress none -profile AdobeRGB1198.icc EPS:newpathandfilename but this does not seem to render out the ascii formatting - can you advise?
